In the bowl of a stand mixer, combine ingredients to form dough. Fold in cranberries.
Divide dough in half. Form 2 loaves on a parchment lined cookie sheet.
First bake, at 350 F for 25 minutes.
Reduce oven temperature to 325 F.
Cut logs into 1/2" thick slices.
Stand biscotti back on the lined baking sheet.
Return to the oven for second bake,
When the biscotti is completely cool, dip the bottom of each biscotti in melted chocolate.
Place dipped biscotti on a wax paper lined tray. Refrigerate for 5 minutes to set the chocolate.
