Birthday Cake Surprise Cookies

Faux Royal Icing (Corn Syrup Icing)

  • 4 cups confectioners sugar
  • 3 tablespoons milk
  • 3 tablespoons light corn syrup
  • 1 teaspoon vanilla
  • For chocolate icing: 2 tablespoons baking cocoa
  • 2-3 drops brown food coloring optional


  1. In a medium bowl, combine sugar, cocoa if using, and milk until smooth.
  2. Add corn syrup and vanilla. Continue beating together until smooth and glossy. Add additional milk in tablespoon increments until desired consistency. (Icing consistency should be thin enough to spread easily but thick enough not to drip excessively off the cookies.)
  3. Mix in food coloring, if using.
  4. Spoon icing into piping bags or ziplock bags.
