- In a large bowl, combine the flour, baking soda and salt and set aside.
- In the bowl of a stand mixer with the paddle attachment, cream together the shortening and sugar until fluffy.
- Beat in the eggs and vanilla until smooth. Add the dry ingredients and mix just until combined. Stir in the jimmie sprinkles.
- Use a medium scoop to portion out 2 tablespoon cookie dough balls, 2 inches apart, on a parchment paper lined cookie sheet.
- Bake cookies until the top and edges are golden brown, about 11 minutes. The cracks in the center may still look wet.

To ensure that the cookies don't stick to each other in the freezer and when you defrost them, freeze in layers separated by wax paper inside an airtight storage container or freezer weight ziplock bag. A sturdy container is best to protect the cookies from breakage.
Another option, is to stack cookies, separated by pieces of wax paper. Wrap the stack in plastic wrap and place in a freezer weight ziplock bag.
To thaw, remove the cookies from the wrapping and containers to avoid condensation that could make the cookies soggy, and thaw at room temperature.
Frozen sugar cookie dough or frozen baked sugar cookies can be stored in the freezer for up to three months if well wrapped and frozen in airtight containers.

Funfetti Cookie Recipe
Ingredients
- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup butter flavored vegetable shortening
- 1 ½ cups sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- ⅔ cup multi-color jimmies sprinkles
Instructions
- Preheat oven to 375° F. Line a baking sheet with parchment paper.
- In a medium bowl, whisk to combine the flour, baking soda, and salt. Set aside.
- In the bowl of an electric mixer, cream together the shortening and sugar for about 2 minutes or until fluffy.
- Beat in the eggs and vanilla until smooth.
- Add the flour mixture and mix just until combined.
- Stir in the jimmies sprinkles.
- Use a medium (1 ½ tablespoon) scoop to place dough balls on the prepared baking sheet, 2 inches apart.
- Bake for about 11 minutes. The top and edges should be lightly browned and the cracks in the center may still look wet.
