Whether you make these treats as regular bars or double the recipe for super thick bars, the ratio of soft, chewy marshmallow to toasty, crunchy matzo is perfect. These treats are a Passover dessert you can really sink your teeth into.
Ingredients

- Matzo: Regular matzo or gluten free matzo can be used.
- Marshmallows: I used Manischewitz kosher for Passover marshmallows. I wasn't able to find mini marshmallows, so I cut each of the larger marshmallows into fourths for easier melting.
- Butter: To make this recipe parve, use margarine.
- Chocolate: Any chocolate bar can be used. Dark chocolate parve Passover chocolate was used in this recipe. For non-Passover use, melting chocolate is recommended.
- Coconut oil: Adding a tiny bit of oil to melted chocolate helps make it more fluid for dipping and drizzling and helps to prevent bloom (when the cocoa butter separates from the chocolate and makes spots on the surface of the chocolate).
- Candy sprinkles: I was able to buy kosher for Passover Bakers Choice brand candy lentils at my supermarket. Bakers Choice and other brands are also available online.
Instructions

- In a large sauce pan over low heat, slowly melt the butter, then mix in the extract.
- Add the marshmallows and stir continually until melted.
- Remove from the heat and immediately mix in the crushed matzo and optional add-ins.
- Press the marshmallow mixture into the prepared pan in an even layer.

- Unmold the candy onto a cutting board and cut into bar sized pieces.
- Melt the chocolate in the microwave at 50% powe. Stir the coconut oil into the chocolate until melted and combined.
- Dip a corner or drizzle each marshmallow bar with chocolate and add sprinkles. Place on a wax paper lined pan.
- Place the pan into the refrigerator until the chocolate has firmed.
Storage
Store chocolate coated Matzo Marshmallow Treats in an airtight container at room temperature. The candy will stay chewy for at least one week.
Thicker bars stay chewy longer.
Tips
- For thicker bars (shown in the image at the top of the page) double this recipe and press into the same 8" x 8" pan indicated in the recipe.
- For gluten free Krispie Treats use gluten free matzo. The other ingredients are naturally gluten free, but be sure they indicate gluten free on the packaging.
- The matzo should be crumbled into pieces no smaller than a quarter. Further crumbling occurs when the matzo is mixed into the melted marshmallow.
- Replace ¼ - ½ cup of the matzo crumbles with your favorite add-ins such as slivered almonds, chopped chocolate, sprinkles, chopped dried fruit, coconut shreds.
- Don't use chocolate chips for melting. Chocolate chips are formulated to inhibit melting and require too much added coconut oil to make them fluid.
- If using sprinkles or candy lentils, add them immediately after applying melted chocolate to each bar.

Matzo Marshmallow Treats
Ingredients
- 4 tablespoons butter or margarin
- 10 ounces mini marshmallows or regular marshmallows cut in fourths
- 2 cups crumbled matzo, quarter sized pieces about 4 sheets of matzo
- 1 teaspoon vanilla extract or almond extract
- 3 ounces chocolate bar
- ¼ teaspoon coconut oil
- sprinkles or candy lentils (optional)
Instructions
Matzo Marshmallow Candy
- **For thicker bars (shown in the recipe image) double this recipe and press into the same 8" x 8" pan indicated in the recipe.**
- Use nonstick cooking spray to lightly coat an 8" x 8" baking pan.
- In a large sauce pan over low heat, slowly melt the butter. Mix in the vanilla extract.
- Add the marshmallows and stir continually until melted and combined with butter.
- Remove from the heat and immediately stir in the crushed matzo and optional add-ins.
- Press the marshmallow mixture into the prepared pan in an even layer.
- Let the mixture cool and firm in the pan at room temperature for about an hour.
- Unmold the candy onto a cutting board and cut into bite sized pieces about 2" x 2".
Chocolate Coating
- Line a small baking sheet or pan with wax paper.
- Melt the chocolate in the microwave at 50% power for one minute. Stir, then return to the microwave for 15 second intervals, stirring between intervals, until completely melted.
- Stir the coconut oil into the chocolate until melted and combined.
- Dip a corner of a marshmallow bar into the melted chocolate, place on the prepared baking sheet, and sprinkle with candy lentils. To drizzle the bars with chocolate, make zig zags dripping the chocolate from a spoon or put the melted chocolate into a small plastic bag with a tiny bit of a bottom corner cut off.
- Place the baking pan into the refrigerator for about 10 minutes or until the chocolate has firmed.
- Store in an airtight container at room temperature for up to a week.

I haven't tried this recipe with oil. When I looked for rice krispie treats with oil, they all seemed to use coconut oil which solidifies at room temperature. If you cook with coconut oil, I would try that.
