    Ingredients

    Ingredients: flour, freeze dried strawberries, eggs, shortening, sugar, vanilla, strawberry flavor, baking soda, salt, food coloring.

    Instructions

    Instructions: grind dried strawberries, combine ingredients for dough, scoop balls onto baking sheet, sprinkle sugar, bake.
    1. Grind freeze dried strawberries into a fine powder.
    2. Combine ingredients to form dough.
    3. Make cookie dough balls with a medium cookie scoop and place on a parchment paper lined cookie sheet.
    4. Bake cookies until the top and edges are golden brown. The cracks in the center may still look wet.

    Storage

    Store Strawberry Sugar Cookies in an airtight container at room temperature for up to 2 weeks.

    Tips

    • For best results, don't use butter in this recipe. Butter causes the batter to spread too much, resulting in very thin cookies.
    • For strong strawberry flavor, be sure to use a good brand of strawberry flavoring. I like to use Lorann baking emulsion.
    • To create slightly thicker, perfectly round cookies, place a large round cookie cutter over a cookie on the baking sheet immediately after removing from the oven while the cookies are soft. Rotate in a circular motion to swirl the cookie into shape.
    • If you have left over ground strawberries, mix it with a little powdered sugar for strawberry flavored sugar and sprinkle over the cookies.
    • For a special treat, dip the cookies in melted chocolate for chocolate covered strawberry cookies.

    Frequently asked questions

    Are dried strawberries the same as freeze-dried strawberries?

    No. Dried strawberries still contains some moisture which keeps them soft and chewy. Freeze dried strawberries contain little to no moisture making them crisp and crunchy.

    How do I bake soft, chewy cookies?

    Baking cookies at 375 degrees F bakes the cookies quickly and creates soft, chewy results. Cookies baked at lower temperatures sit in the oven longer and dry out more, creating crunchy cookies.

    Strawberry Sugar Cookies

    Ingredients

    • ½ cup freeze dried strawberries finely ground into 3 tablespoons powder
    • 2 ¼ cups all-purpose flour
    • 1 teaspoon baking soda
    • ½ teaspoon salt
    • 1 cup butter flavored vegetable shortening
    • 1 ½ cups white sugar
    • 2 large eggs
    • 2 teaspoons vanilla extract
    • ¾-1 teaspoon strawberry flavoring I use Lorann baking emulsion
    • 4 drops pink food coloring gel optional
    • ¼ cup large crystal decorating sugar

    Instructions

    • Preheat oven to 375° F. Line a baking sheet with parchment paper.
    • Grind the freeze dried strawberries into a powder using a blender, food processor or spice grinder.
    • In a large mixing bowl, whisk to combine the 2 ¼ cups flour, 3 tablespoons of freeze-dried strawberry powder, baking soda, and salt. Set aside.
    • In the bowl of a stand mixer using the paddle attachment, cream together the shortening and sugar for about 2 minutes or until fluffy.
    • Beat in the eggs, vanilla, and strawberry flavoring until smooth.
    • Add the dry ingredients and mix just until combined.
    • Add pink food coloring gel, if using, and mix until the color is uniform.
    • Use a medium (1 ½ tablespoon) cookie scoop to place dough balls on the prepared baking sheet 2 inches apart and sprinkle with decorating sugar.
    • Bake for 10-11 minutes. The top and edges should be lightly browned and the cracks in the center may still look wet.
    • Immediately after removing from the oven, while the cookies are still soft, place a large round cookie cutter over each cookie and swirl in a circular motion to round the edges and create a slightly thicker cookie.
    • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
    • When cooled, store in an airtight container at room temperature for up to 2 weeks.

    Notes

    Packing tips
    • Wrap pairs of cookies, bottoms together, in plastic wrap.
    • Stack the bundles in a column in a ziplock freezer bag.
    • Remove as much air as possible from the bag before sealing.
    • For shipping times longer than 2 weeks, vacuum sealing is recommended.

      That is a lovely Mother's Day tradition. It is hard when our kids move away! Glad you get a rain check though. It is thought-provoking thinking about the Moms in the military.         Thanks, April! I am truly delighted that my son has always enjoyed cooking and isn't at all intimidated to experiment in the kitchen.       whoa: i never thought of flavoring powdered sugar with freeze dried fruit! so many things you could use that for; what a great idea. I like the idea of chocolate covered strawberries in cookie format; nice job!

        Thanks, Shannon! I can't wait for someone to use the freeze dried fruit flavored powdered sugar in another recipe! A few years ago, you could buy a few flavors of powdered sugar at the supermarket (I think it was Domino or C&H). But then it was discontinued. I have been looking for a substitute ever since that doesn't involve food coloring and fake flavor (jello mix). There are so many varieties of freeze dried fruit now, the possibilities have me giddy. 🙂

      Freeze dried fruit to flavor confectionary sugar?! How cool is that! Do you have to let it sit in an air tight container or anything? Or do you just grind it up, mix it in and then sprinkle it on top? Great idea!

        I am really excited about the freeze dried fruit and confectioners sugar, Julianne! I put the sugar and freeze dried strawberries in the food processor, ground them up, then sprinkled on the cookies. Great taste and such a pretty pink! I stored the left over sugar in a ziplock bag (for over 2 weeks now) and it is still perfect and powdery! Freeze dried fruit has ALL the moisture taken out so it turns to powder very easily. 🙂

        Thanks, Kate! Honestly, I had never made strawberry cookies before this recipe either, but I was pleasantly surprised at how addicting they are. The addition of freeze-dried strawberries to the cookies and the dusting sugar gives them real strawberry flavor. I will swap you a cookie for a slice of your Strawberry Savarin! 🙂

        Thanks, Jennifer! I am really excited about the flavored confectioner's sugar too. Basically, any freeze-dried fruit can be used. I found my strawberries at Target but have seen them at Trader Joe's and my regular supermarket in the produce department. They also sell mango, pineapple, blueberry, and banana!

      I loved the story about your kids cooking for you. I can remember one Mother's day my son had got me a necklace from school, he was so proud to turn in his reading points for that necklace! He must've been about 7 🙂 Last year on Mother's day my son was in Afghanistan. This company out of Georgia lets the soldiers fill out a form and then sends us Moms a gift from our soldier. It had seeds to plant, perfume, a bracelet and other little things, it was so awesome. I told Derek (my son) that I received it and he forgot (being over there you would) that he even filled out the paperwork. Your idea of the chocolate covered strawberry cookies is amazing! You are so creative and I just love that you make things that are shippable....that's a word right? 😉

        Suzie, thank you so much for sharing your Mother's Day smiles! How wonderful that Derek was able to send his love from so far away, under such stressful circumstances! Apparently he has been a thoughtful son all his life! I love the story of his trading reading points for a present for you!! Shippable, mailable they all get spell check red lines on my computer but I insist that my spell check must be an outdated version.
